THE FOOD WASTE
PROBLEM
Globally, one third of all the food produced for human consumption is wasted every year according to the FAO, which is enough to feed 3 billion people.
Wasting food is not only about the final product that is going to the bin, but also about all resources that have been required for its production, distribution, storage and preparation that are thus uselessly consumed.
In Thailand, the Bangkok Metropolitan Authority estimates that food waste represents more than 50% of all the waste found in landfills.
The Zero Food Waste to Landfill Event
In a landmark collaboration with The PLEDGE™ on Food Waste, Michelin proudly presents the Zero Food Waste to Landfill Event, a pioneering effort in food waste prevention. This event, designed to set a new benchmark in sustainable practices, is organized meticulously, aligning with the Zero Food Waste to Landfill Event Standard.
BUILDING UPON THE FOUNDATION
In 2020, the MICHELIN STAR REVELATION Thailand brought together renown chefs to engage in raising awareness and exploring ways to repurpose unutilized food.
Every dish that could be rescued for human consumption was identified, ensuring safe preservation of food rescued, and was redistributed to people in need.
